CHICKEN TACOS
A taco is a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling. A taco can be made with a variety of fillings, including beef, pork, chicken, seafood, vegetables and cheese, allowing for great versatility and variety. A taco is generally eaten without utensils and is often accompanied by garnishes such as salsa, avocado or guacamole, cilantro, tomatoes, minced meat, onions and lettuce.
INGREDIENTS:-
Chicken breast-4 pounds(diced into 1/2 inch chunks)
Black beans(drained and rinsed)-1 can
Chopped onion-1
Chopped garlic-10
Chili flakes-2 tsp(or to taste)
Dried oregano-2 tbsp
Chicken stock-1 cup
Olive oil-2 tbsp
Salt and black pepper powder to taste
Sour Cream-1 pint
Chopped onions-1/2 cup
Grated Cheddar cheese-1 & 1/2 cup
Corn taco shells-10
Salsa(homemade or store-bought)-1/2 cup(see my recipe here)
METHOD:-
1-In a pan heat olive oil over medium heat,add chopped garlic and onions and cook until soft and nicely caramelized,about 10 to 12 minutes.
2-Add chicken,salt and pepper powder and cook till chicken is done.Then add chili flakes,dried oregano and chicken stock.
3-Bring to boil,reduce the heat and simmer until the sauce is thick and delicious,approximately 20 minutes.Adjust seasoning with salt and pepper.Keep aside
4-Cook beans in heavy small saucepan over low heat until heated through,stirring occasionally.Remove from heat and keep aside.
5-Heat taco shells for 5-6 minutes or according to package directions.
TO ASSEMBLE TACOS:
1-Place corn tacos to serving plate,spoon chicken mixture in the bottom,then top with beans,salsa and sour cream.
2-Sprinkle chopped onion and grated cheddar cheese and Serve immediately.
