BANOFFEE PIE
Banoffee pie is an English dessert pie made from bananas, cream and toffee from boiled condensed milk (or dulce de leche), either on a pastry base or one made from crumbled biscuits and butter. Some versions of the recipe also include chocolate, coffee or both.Its name is a portmanteau constructed from the words "banana" and "toffee"
Graham cracker crumbs-1 1/2 cups
Butter-1 cup
Condensed milk-1 can
Heavy whipped cream-2 cups(8 ounce)
Bananas(ripe)-2 large
Grated chocolate(for decoration)-
METHOD:-
1-Tip the cracker crumbs into a bowl. Add the butter and mix in. Spoon the crumbs into the base and about halfway up the sides of the tin to make a pie shell. Chill for 10 minutes.
2-In a sauce pan, boil an unopened can of sweetened condensed milk for 3 hours on low heat. Monitor the water closely, to make sure there is always water in the pan. Remove can from heat and let cool for 1 hour.
3-Open can and pour toffee into pie crust.Allow to cool.
4-Slice up a couple of ripe bananas on top of toffee.Whip 2 cups of cream and spoon it on top of bananas.
5-Grate some chocolate or even chocolate curls,Sprinkle on the top of cream and refrigerated for 1 hour.Serve chilled and enjoy.
(BIG TIP one can boil up a load of tins of condensed milk. once they are cooked they will keep very safely for months in the larder or cupboard. just keep an eye on water levels. this makes it the fastest dessert in town if one has the toffee already. also the biscuit base mix freezes very well.Before whipped cream refrigerate both cream and bowl for 1-2 hours.)
