PAKUDI TARKARI(PAKODA CURRY)




INGREDIENTS:-

FOR PAKODA(PAKUDI):

Gram flour-1 cup
Chopped onion-4 tbsp
Ginger-Garlic paste-1/2 tsp
Chili powder-1/2 tsp
Baking soda-1/4 tsp
Turmeric powder-2 pinch
Hing-a pinch
Salt to taste
Water as need
Oil for deep frying

FOR CURRY:

Chopped onion-1 large
Chopped Tomato–2
Ginger-garlic paste-1 tbsp
Whole garam masala-1 tbsp(cardamoms,cloves,black pepper,coriander seeds,cumin seeds,cinnamon and bay leaves)
Dry red chili-2
Chili powder–1/2 tsp
Coriander powder-1/2 tsp
Cumin Powder-1/2 tsp
Turmeric Powder–1/4 tsp
Garam masala-1/2 tsp
Oil-1 tbsp
Salt to taste

METHOD:-

1-Mix all ingredients for pakoda(pakudi) except water in a large bowl.Then make a dumpling batter with the help of very little water.Mix  it well with spoon.
2-In a kadhai heat oil on medium heat.When oil is heated,drop batter in the oil using finger or spoon and fry till golden brown.
Drain on paper towel to soak extra oil.Keep aside.
3-In a pan heat oil.add dry chili and splutter whole garam masala,then add chopped onions and fry till golden brown.
4-Now add ginger-garlic paste and fry for a minute,then add turmeric powder,chili powder,coriander powder,cumin powder,garam masala and salt.
5-Mix well and cook till oil evaporates from the masala.Then add chopped tomatoes and cook till tomatoes are soft.
6-Add 1 cup of water to the masala,when it starts to boil add pakoda(pakudi) and mix well.(keep some pakoda for garnish and cut into small pieces).
7-Let it simmer for 4-5 minutes on medium flame.Remove from heat,garnish with small pieces of pakoda and serve hot with rice or roti.
