GUP CHUP/PANI PURI/GOL GAPPA/PUCHKA
Pani Puri or Gol Gappa or gupchup or Puchka,is the most popular chaat item in Indian street.It is served filled with spicy mint water and mashed potato and yellow peas mixture.It is my most favorite street food from childhood.So let's start....
INGREDIENTS:-
FOR DOUGH:
Semolina-1 cup
All purpose flour-4 tbsp
Baking soda-1/4 tsp
Oil-1 tbsp
salt to taste
Water for kneading
FOR FILLING:
Boiled Potatoes-2 large
Chopped onion-1 large
Boiled yellow peas-1/2 cup
Chopped green chili-4
Chopped Coriander leaves-2 tbsp
Roasted cumin-chili powder-1 tsp
Sour water(khata pani)-2 tbsp
Black salt-a pinch
Salt to taste
FOR PANI:
Water-6 cups
Tamarind pulp/paste-2 tbsp
Green chili-2
Ginger-1/2 inch
Jal jeera powder-2 tsp
Mint leaves-1/2 cup+2 tbsp chopped(for garnish)
Roasted Cumin-chili powder-1/2 tsp
Black salt-a pinch
Chopped coriander leaves-2 tbsp
salt to taste
METHOD:-
FOR POORI:
1-In a large bowl,mix semolina,all purpose flour,baking soda,oil and salt, adding water slowly and make a dough.
2-Covered with a cloth and keep aside for 20-30 mins.After 30 min,knead the dough again properly.
3-Take some dough and make very small balls.Roll out small thin rotis, using the rim of a container to cut out the round shape.
4-In a pan heat enough oil for deep frying on medium heat,once its hot slide few rotis into the hot oil and using the back of the ladle, press in the center and along the edges and you will find it will puff.
5-Flip over and fry the other side till light golden brown. Don’t fry too much as it will turns too dark. Remove on to absorbent paper.
FOR FILLING:
1-Peel and mash the boiled potatoes,add boiled yellow peas,chopped onion,chopped green chili,chopped coriander leaves,roasted cumin-chili powder,black salt,sour water(khata pani),salt and mix well,keep aside.
FOR KHATA PANI(SOUR WATER):-
1-Make a fine paste of mint leaves,green chili and ginger.
2-In a large bowl,add water,mint paste,tamarind pulp/paste,jal jeera powder,roasted cumin-chili powder,black salt and salt,mix properly.Garnish with chopped coriander leaves and mint leaves.
ASSEMBLING PANI PURI/GUP CHUP:
1-Take a small poori in your palm and lightly press the top to make a hole in the poori.
2-Stuff with a tsp of spiced potato filling, pour 2 tbsp of the prepared khata pani(sour water) and stuff the whole puchka into your mouth.
3-Enjoy your pani puri/gup chup/gol gappa/puchka.
