KALA JAM/KALA JAMUN

Kala jamun is a famous Indian dessert.It is same as with gulab jamun,the only difference is the sugar is added in the batter and after frying, the sugar caramelization gives it its dark almost black colour,which is then called kala jam, "black jam"





INGREDIENTS:-

Milk powder-1 cup
All purpose flour-1/4 cup
Hot milk-1/4 cup
Sugar-2 tbsp
Ghee-2 tsp
Sugar-1 cup
Water-1 cup
Cardamom powder - 1/4 tsp
Saffron-1 pinch
Rose water-2 tsp

METHOD:-

1-In a saucepan,add sugar and water to prepare the syrup,bring that to a boil.Add saffron,cardamom and rose water,mix well and leave it aside.
2-In a bowl add milk powder,flour,sugar,ghee and milk.Make a soft dough and knead it gently and leave it to rest for 10 mins.
3-Make small balls with it,then make it to small cylindrical shapes.(this is optional only,you can keep it to round shape also).
4-Heat the oil in a pan,when the oil is warm add the rolled dough balls in the oil and cook in low heat slowly till it attains nice darker color.
5-Remove from heat,drain and soak them in warm syrup.Allow to soak for 3-4 hrs.After 4 hrs you can see the Kala Jams swell up after absorbing the syrup.
6-Lip smacking homemade kala jams are ready to serve.Serve cold and enjoy..!!!
