VADA PAV

Vada pav or wada pav,is a popular vegetarian fast food dish native to the Indian state of Maharashtra.It consists of a batata vada sandwiched between 2 slices of a pav.The compound word batata vada refers in Marathi to a vada (fritter) made out of batata,the latter referring to a potato.Pav refers to unsweetened breador bun.

INGREDIENTS:-

Pav-2
Vatada bada-2
Peanut garlic chutney-1 tbsp
Tamarind chutney-1 tbsp
Green chutney-1 tbsp

FOR BATATA VADA:-

Boiled Potatoes-3(peel and mashed)
Gram flour(besan)-4 tbsp
Rice flour-1 tbsp
Chopped onion-1 medium
Chopped ginger-2 tsp
Chopped garlic-2 tsp
Green chili-3-4
Cumin seeds-1/2 tsp
Mustard seeds-1/2 tsp
Cumin powder-1 tsp
Red chili powder-1/2 tsp(for masala)+1/4 tsp(for batter)
Coriander powder-1 tsp
Turmeric powder-1/4 tsp+1/2 tsp(for batter)
Curry leaves-5
Chopped coriander leaves-1 tbsp
Asafetida-a pinch
Lemon juice-1 tsp
Baking soda-1 pinch
Water-1/2 cup
Oil-1 tbsp
salt to taste
Oil for deep frying

FOR PEANUT-GARLIC CHUTNEY:-

Roasted Peanut-1 cup(remove skin)
Garlic-2 cloves
Cumin seeds-1/2 tsp
Dry red chili-1-2(as per taste)
Salt to taste

FOR TAMARIND CHUTNEY:

Tamarind Pulp(Soak tamarind in water and squeeze out the pulp)-1 cup
Roasted Cumin Seeds powder-1 tsp
Roasted fennel seeds powder-1 tsp
Red chili powder-1 tsp
Grated ginger-1 tsp
Boiling Water-2 cups
Jaggery-1 cup
Sugar-1/2 cup
Oil-1/2 tsp
Salt to taste

FOR GREEN CHUTNEY:

Coriander leaves-1 cup
Mint leaves-1/2 cup
Chopped Onions-2 tbsp
Chopped garlic-1 tbsp
Chopped ginger-1 tbsp
Green chilies-3-4
Cumin seeds-1 tsp
Chat masala-2 tsp
Lemon juice-2 tbsp
Sugar-1 tsp
Salt to taste

METHOD:-

BATATA VADA:

1-Blend together the green chilies, garlic and ginger to a fine paste.
2-In a pan heat 1 tbsp oil,add mustard and cumin seeds,curry leaves and asafetida,fry until crackles.
3-Add chopped onions,fry for a while,then add chili,ginger,garlic paste and fry for 2 mins
4-Then add the mashed potato and all the dry ingredients  and  salt.
5-Mix on low flame and finally add the lemon juice and chopped coriander,let it cool.
6-Make small balls from the potato mixture and keep aside.
7-Take a bowl,add gram flour,rice flour,turmeric powder,chili powder,baking soda,water and salt.
8-Make a thick batter,Add a tea spoon of hot oil to the batter(it will make chops crispy).
9-Heat the oil in a pan,divide the potato mixture into equal lemon sized balls and flatten them with your palm.
10-Dip each flattened pc in the batter and deep fry until it become golden brown.


 PEANUT-GARLIC CHUTNEY:

1-In a mixer grinder add all ingredients and grind to a coarse powder.
2-Mix well and transfer to a bowl and serve with idli,dosa,roti and vada pav.


 TAMARIND CHUTNEY:

1-In a bowl add tamarind pulp,jaggery,sugar,salt and boiling water and mix well.
2-In a pan heat oil,then add grated ginger and stir for 1-2 mins.
3-Add roasted cumin seeds powder,roasted fennel seeds powder,chili powder mix properly.
4-Then add tamarind mixture and cook till the paste thickens to a ketchup like consistency.
5-Allow it to cool and store in a clean dry container.


 GREEN CHUTNEY(MINT-CORIANDER):

1-Mix all ingredients except lemon juice and grind to a smooth paste.(adding little water also)
2-Add the lemon juice  and mix well.
3-Keep in an airtight container in the refrigerator.


ASSEMBLE:-

1-Take a pav,cut open the rolls horizontally,taking care one end is still connected.
2-Apply the green chutney on one side and tamarind chutney on the opposite side.
3-Keep the batata vada inside the pav and sprinkle peanut garlic chutney.
4-Now your vada pav is ready,Serve with tea.
