KESHAR PISTA SANDESH
Sandesh is an Indian dessert created with milk and sugar.It is basically prepared by tossing the Indian cheese(chhena)lightly with sugar over low heat.The sandesh is essentially hot, sweetened Chhana which has been shaped into balls.
INGREDIENTS:-
Homemade paneer(chena)(crumbled)-1 cup(you can also use ricotta cheese)
Powder Sugar-1/4 cup
Saffron-a pinch
Cardamom powder-1 tsp
Sliced Pistachio nuts-1 tbsp
METHOD:-
1-In bowl add paneer,sugar and cardamom powder and knead the crumbled paneer for 6-8 mins.
2-Heat a pan in a medium heat and add the kneaded paneer.
3-Cook it on low heat by constantly stirring it.
4-After 18-20 mins,paneer becomes thick,starts coming together and doesn't stick to the pan,then remove from heat.
5-Allow it to cool for 4-5 mins,then knead it again for 4-5 mins.
6-Divide them into equal balls and make desired shapes.
7-Garnish with sliced pistachio nuts and refrigerator it for an hour,serve chill.
