EGG CURRY
INGREDIENTS:-
Hard Boiled eggs-6
Boiled potato- 1 large(cut into cubes)
Chopped onion-1 large
Ginger-Garlic paste-1 tbsp
Chopped tomato-1 large
Turmeric powder-1 tsp+1/4 tsp(for egg)
Red chili powder-1 tbsp
Garam masala powder-1/2 tsp
Coriander powder-1/2 tsp
Cumin powder-1/2 tsp
Dry red chili-2
Whole garam masala-2 tsp(cardamoms,cloves,black pepper,coriander seeds,cumin seeds,cinnamon and bay leaves)
Sugar- 1 tsp
Oil-2 tbsp
Salt to taste
Chopped freshly coriander leaves for garnishing
METHOD:-
1-Heat 2 tsp oil in a pan and add boiled eggs,1/4 tsp turmeric powder and 2 pinch of salt.
2-Fry on medium-high heat till both sides turn brown,cut into halves and keep it aside.
3-Heat remaining oil,add whole garam masala and dry red chili,saute for a second.
4-Add chopped onions and fry till they turn light brown.
5-Now add ginger-garlic paste and saute further for another 3-4 minutes on medium heat.
6-Then add turmeric powder,chili powder,cumin powder,coriander powder and salt combine well and fry for another min.
7-Add the tomatoes and cover the lid and let it cook well till oil separates.
8-Add boiled potatoes and mix properly,drop the fried sliced eggs and give a nice mix.
9-Add water depending on the gravy you want and cook it covered for another 8-10 mins.
10-Turn off the heat,add garam masala powder and chopped coriander leaves and serve hot with rice or chapati.
