CHENAPODA


Chenapoda is the FAMOUS cheese dessert from the state of Odisha in eastern India. Chenapoda literally means burnt cheese in Odia. It is made of well-kneaded homemade cottage cheese or chena, sugar and raisins, and is baked for several hours until it browns. Chenapoda is the only well known Indian dessert whose flavor is predominantly derived from the caramelization of sugar.






INGREDIENTS:-

Whole milk-1 gallon
Lemon juice-juice of 1 big lemon or 3 tbsp vinegar(but I prefer lemon juice)
Semolina-3 tsp
Condensed milk-1/2 cup
Sugar as per your taste(2 tbsp for caramel)
Cardamom powder as per taste
Ghee-2 tsp
Milk-3 tbsp
Raisins-handful(optional)



METHOD:-

1-Boil milk in a heavy bottomed pan over medium flame,Once it come to boil, add lemon juice
2-The milk will curdle, boil for a minute then turn off the flame(you can see the chena separating from the water.
3-Put the curdled milk in a muslin cloth, drain out the water, place the muslin cloth with chena under the running cold water tap, this will remove the sour whey, squeeze out the water & hand the muslin cloth for 15-20 minutes.
4-Fry raisins in ghee lightly to give a richer taste to the preparation.
5-To get a caramelized effect on the top, add 2 tbsp of sugar and a tsp of ghee in a baking pan, then hold it slightly above the gas stove for a few minutes to melt the sugar.Spread the melted sugar evenly.
6-In a bowl mash the chena, sugar and semolina(suji) well with hands nicely till the sugar mix well.Then add raisins, cardamom powder, condensed milk, ghee and milk.Mix all ingredients smoothly and keep aside.
7-Pour the chena mixture over the caramel.Bake in a preheated oven of 350 degree F approx. 1 hour or till the top turns to light brown.Insert a toothpick, it's done when the toothpick comes out clean.
8-Let the chenapodo cool completely, then turn it upside down.Cut into pieces like cutting a cake and serve chilled or warm.It should stay fresh for a week in the fridge.

NOTE-

1-You can also try in microwave or pressure cooker.
2-In a pressure cooker take out the whistle, place the baking pan inside the cooker and close it and pressure cook for 30-35 minutes in low heat.Cool for 10-15 minutes, then serve.
3-Or you can try in a kadhai just like poda pitha. Heat a heavy bottom kadhai, then hold it slightly above the gas stove for a few minutes to melt the sugar.Spread the melted sugar evenly.
4-Then pour the mixture over the sugar.Now cook in a slow flame for 45-50 minutes.Insert a toothpick, it's done when the toothpick comes out clean.
