KANIKA

"SWEET RICE(KANIKA)" is one of the most famous mahaprasad of Lord Jagannath in Jagannath Temple, Puri, ORISSA,made of rice,ghee and sugar.


INGREDIENTS:-

Basmati rice-2 cups
Sugar-1/2 cup
Water-4 cups(Water should be double the amount of rice)
Raisins-10
Cashew nuts-8
Cardamom-4
Cloves-4
Bay leaves-2
Turmeric powder-1/4 tsp
Saffron-1/2 tsp
Ghee-6 tbsp
Salt to taste

METHOD:-

1-Wash and soak rice for 30 mints.
2-In a pressure cooker heat ghee,fry raisins and cashew nut and keep aside.
3-In the same cooker sprinkle 1 tbsp of sugar and cook until sugar melted and turned into brown colour.
4-Add bay leaves,cardamoms,cloves,rice and fry for 4-5 mins and stir constantly.
5-Add water,fried cashew nuts and raisins,salt, sugar,turmeric powder,saffron and cover it.
6-Cook in medium flame until 2 whistle.
7-Switched off the flame and let it cool down.
8-Now kanika is ready and serve hot.
