SURATI SEV KHAMANI
Sev khamani is a typical Gujarati cuisine.
It is very famous snack in surat(Gujarat,India) that's why it's called surti sev khamani.
Sev khamani is made by crushed chana dal,cooked by adding lots of garlic and green chili,ginger paste.
Later salt,sugar ,turmeric powder and some other spices are sprinkled on it.
The garnishing is done with the help of coriander leaves and sev.
Sometimes pomegranates are also used for garnishing.
INGREDIENTS:-
Bengal Gram(chana dal)-2 cup
Garlic Cloves-8
Ginger- 1 small piece
Mustard seeds-2 tsp
Turmeric Powder-1 tsp
Pinch of Asafoedita
Green chillies-7-8
Sugar-3 tbsp
Lime juice-2 tbsp
Milk-1 cup
Salt to taste
Chopped coriander leaves-1/2 cup
Grated coconut-1/2 cup
Thin Sev-1 cup
Oil-4 tbsp
METHOD:-
1-Soak the chana dal for 4-5 hours in water.
2-Drain the chana dal and grind it coarsely and add water if required.
3-Grind ginger, garlic and chillies together and keep side.
4-In a non-stick pan heat oil,add mustard seeds and asafoedita.
5-Once the seeds starts sputtering add chana dal paste and saute for 2-3 mins on low-medium heat.
6-Add chilly ginger garlic paste to the pan and saute for 3-4 minutes.
7-Add salt and turmeric powder.Mix it properly.
8-Gradually add milk and stir continuously until it becomes soft and fluffy (Use more milk if mixture is still dry).
9-Add sugar and lemon juice and cover it for 2-3 min.
10-Cook the chana dal till oil separates the vessel.
11-Turn off the heat,garnish with thin sev,grated coconut and coriander leaves and serve hot.
