"Dalma" is a special,delicious and famous cuisine of Odisha, made of lentils(dal) & various vegetables.It is popular due to the high nutritional value and consumed as a complete food.Among all dalma prepared through out Odsha,The Dalma prepared in PURI is the best and more delisoius.It is called "BADIA DALMA".So let's start cooking...
INGREDIENTS:-
Papaya:1/2 cup(cut into large pieces)
Potato:1 large(peeled and cut into large pieces)
Pumpkin-1/2 cup(cut into large pieces)
Beans-3/4 cup(cut into 2 inch long pieces)
Eggplant-1 medium(cut into medium size pieces)
Drumstick-2(cut into 2 inch long pieces)
Raw banana-1(cut into medium size pieces)
Pigeon pea(Harad/toor dal)-2 cups
Grated ginger-2 tbsp
Panch phutan-1 tsp(Cumin seeds,Mustard Seeds,Fenugreek seeds,Fennel seeds,Nigella seeds)
Grated coconut-1/2 cup
Turmeric powder-1 tsp
Asafetida powder-1/4 tsp
Dry chili-2
Salt to taste
Ghee-1 tbsp
Sugar-1/2 tsp
FOR GARNISHING:
Chopped coriander leaves-2 tbsp
Roasted cumin chili powder-2 tsp(Roast 2 tbsp cumin seeds and 2 dry red chili till light brown,then grind it together to make a powder)
METHOD:
1-Boil 4-5 cups of water,add the dal,turmeric powder,ginger,sugar,salt and cook till the dal is half cooked.
2-Add all vegetables and cook till the vegetables are half cooked.
3-Add tomato, grated coconut and asafetida powder,cook until vegetables become soft and tender.
4-Heat ghee in a pan,add panch phutan and dry chili,fry until it crackle.
5-Add the cooked dal and vegetable mixture slowly.
6-Sprinkle roasted cumin chili powder and garnish with chopped coriander leaves and serve.
